A barrel aged koelschip collaboration brewed with James from Wilderness Brewery in January 2024.

We hand milled raw wheat to go along with our Suffolk barley and wheat in the grist, and left the beer overnight on a rather chilly evening to inoculate in our koelschip.
We added a small amount of the Wilderness house yeast in the morning before transferring the beer to barrel to age for just under 14 months.
Stone fruit is certainly the first flavour to burst out of this beer - bright peach and apricot with a dry, moreish finish.
