Mixed fermentation red sour aged in amarone barrels.
Aromas of burnt molasses and tart damsons invite you in for a mouth puckering sour. The taste is complex with more stone fruits and balsamic vinegar coming through with a robust woody tartness. The acidity soon mellows leaving an aftertaste of grape must and a dry mouthfeel. Fermented with Saccharomyces cerevisiae, Brettanomyces, Lactobacillis and Pediococcus blend. Contains sediment.
