In mid July 2023, we welcomed Davide and Hans from Lervig’s Rackhouse barrel ageing division to Edwardstone to brew up something nice.
We used a small amount of chocolate malt during the sparge to impart colour without too much astringency from the darker malt. This left us with a lovely deep amber beer which was then left overnight in koelschip with our own grown Bramling Cross hops. Once cooled, it was transferred to a 2nd use port barrel for 16 months before packaging.
Oaky with a dark fruit finish.
