Brewed in August 2020 with our home grown organic barley malt, organic wheat malt and aged hops. The beer fermented slowly in a freshly emptied 350L French white wine barrel. Just over a year later in September 2021, the beer was tasting great with a wonderful minerality that had resulted from the mixed fermentation and unique barrel. We had just harvested our first crop of Centennial hops, which were floral, zesty and full of aromatic oils which we knew would be a perfect match. The result is a powerfully fruity but still nuanced beer.
